    Loaf, Yeast, German Caraway

    List of Ingredients

    2 C scalded milk
    2 T sugar
    2 T butter
    1 tsp salt
    1 yeast cake
    1/2 C lukewarm water
    2 T caraway seed
    6 C rye flour
    1 1/2 C entire wheat flour

    Recipe

    Scald milk, add butter and cool to lukewarm. Add dissolved yeast, mix well and add about 1/2 cup of the whole wheat flour. Beat thoroughly, add rye flour, salt and more wheat flour. Make a dough that can be easily handled, turn out on floured board, and knead until satiny and elastic. Place dough in a greased bowl, let rise until doubled, 2 to 4 hours. Knead, shape into loaves, brush top with melted shortening (optional) and let rise again 1 to 2 hours. shape into loaves. Bake in a 350 degree oven about 60 minutes.
