    Quick Bread, Cheese Caraway

    List of Ingredients

    1 pkg active dry yeast
    1 1/4 C warm water (105-115 degrees F.)
    1 C shredded sharp Cheddar cheese (4 oz)
    2 T shortening
    2 T sugar
    2 tsp salt
    1 tsp caraway seed
    2 2/3 C flour
    melted butter

    Recipe

    Dissolve yeast in warm water. Add cheese, shortening, sugar,salt,caraway seed and 2 cups flour. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 2 minutes on medium speed, scraping occasionally. (by hand 300 vigorous strokes). Stir in remaining flour until smooth. Scrape batter from sides of bowl. Cover and let rise in a warm place for 30 minutes.
    Stir down batter by beating about 25 strokes. Spread evenly into a greased loaf pan. (9x5x3) Smooth out top of batter with flour hands, by patting. Cover and rise until doubled, 40 minutes. Bake 45 minutes or until loaf sounds hollow when tapped. Brush with melted butter. remove from pan and cool on wire rack.
