Place a large handful of hops in a quart of water. cook until reduced by half. Strain it over the corn flour until all is just wet but not stiff. Add a large spoonful of salt and mix well. cool to lukewarm and add 2 tablespoons of yeast. Rub all through with hands until it is stiff and sticks together. Let rise in a warm place for a few hours. When light, rub in more corn flour and sprinkle very thinly into plates on a cloth. Dry in the sun or a warm spot, so as not to sour. If it sours add 1/2 tsp baking soda. When thoroughly dry, place in jars and store in a dry place.
!/2 teaspoon is good for 2 loaves of bread. soak it as you would yeast.
