Muffins, Apple Cinnamon

Recipe Introduction


Preheat oven to 400 degrees F.


List of Ingredients




2 1/2 C flour
1/2 C sugar
2 tsp baking powder
1 tsp baking soda
dash salt
dash nutmeg
1 C apples, diced
1 1/4 C buttermilk
5 T melted butter
2 large eggs
1 tsp vanilla
1/4 C finely chopped almonds
1/4 C brown sugar
1/4 tsp cinnamon

Recipe



combine dry ingredients until well blended, except the nuts, brown sugar and cinnamon.
Combine buttermilk, butter and eggs. add the wet to dry all at once, stir just until under mixed, careful not to over mix. Fold in apples

Spoon into muffin papers. Combine the nuts, brown sugar and cinnamon for a topping. Cover the muffins with the topping.

Bake at 400 degrees F. for 22-25 minutes.Cool 5 minutes before removing from the pan.
