3 eggs
2 T sugar
2 C rich milk
3 T melted butter or margarine
1/2 tsp salt
1 cup flour

Mix the first 5 ingredients in the blender and blend the ingredients for 1 minute. You can also use a hand rotary mixer or a wire whisk. The important thing is that the eggs get a good beating.
Slowly add the flour while the blender is running or while you are continuing to hand mix. When the flour is completely added blend for an additional 30 seconds.
Griddle or pan. When griddle or pan is hot, grease with butter (the butter will give them a crispy edge. If you want a soft edge use a cooking spray) and pour pancake batter in a large circle for crepe size pancakes. They will cook quickly so watch carefully. Flip when the underside is golden brown and the upper side has an opaque look. They are done when both sides are golden brown.
Serve with powdered sugar and applesauce or Lingonberries.
