2 eggs, separated
1 T sugar
1/2 tsp salt
1 C flour
2 T orange juice or brandy
1 T butter, melted
Recipe
Beat egg yolks until light, add sugar and salt, beat well and add flour, beating again. Add fruit juice, butter and enough water to make about the consistency of pancake batter. Fold in stiffly beaten egg whites.
Dip fresh fruit in the batter and deep fat fry to a golden brown. Drain on absorbent paper and sprinkle with confectioners sugar.

Omit the sugar and make fritters with meat, or vegetables.
