    List of Ingredients

    Large flour tortillas (dinner plate size)
    roasted green chilies
    Scrambled eggs
    diced cooked potatoes
    chopped onion
    chorizo
    beans, cooked as in a dry stew (most of moisture cooked out)
    braised meat, shredded (optional)

    Recipe

    Prepare the tortillas by heating them until soft and pliable on a griddle, or in the oven or microwave according to manufacturers directions. Prepare enough to serve people being served. (1-2 per person).
    Scramble the eggs in butter with some of the chilies and a little potato, onion and 1/4 tsp chorizo per 2 eggs or to suit taste.
    Once the tortillas are ready and stacked to keep warm, Place some scrambled egg mixture just off from the center of a tortilla. Then add 1 heaped tablespoon or 2 of the dry beans down the center lengthwise. Add some of the shredded meat if desired. bring the bottom of the tortilla up, then fold in both sides and roll up to seal. Keep warm while making the remaining burritos. You can garnish the tops with sour cream or cheese if you like.
