French Toast with Caramelized Bananas

Preheat oven to 350 degrees F.
List of Ingredients
6 eggs
1 C half and half or milk
1 T sugar
1 T grated orange zest
1 tsp vanilla
1/8 tsp fresh grated nutmeg
6 1/2-inch thick slices challah or egg bread, halved
Canola oil
3 bananas, peeled
2 T unsalted butter
3 T packed light brown sugar
1/2 C fresh orange juice, or as needed
2 T dark rumRecipe
In large, shallow bowl, whisk together first 6 ingredients. Add bread, turn gently to coat evenly. Let stand until bread has soaked up some of the egg mixture, about 1 minute.
Heat griddle over medium heat, lightly oil.
Remove bread from egg mixture, letting excess drip off. Place on griddle. Cook until bottoms are golden, 2 minutes. Transfer to baking sheet. bake until center of bread is heated through but still moist, about 10 minutes.
Meanwhile, cut bananas diagonally into 1/2 inch slices. In large skillet, melt butter over medium high heat. Add banana slices. cook, gently turning, until beginning to brown, 2-3 minutes. Sprinkle with brown sugar, cook until melted, 1 minute.gently stir in 1/2 cup orange juice and rum. Cook until reduced slightly, 1 minute.
If sauce is too thick, add a little juice. Serve over the toast.
