Pan set eggs, lima beans and artichokes

List of Ingredients
1 T olive oil
1 1/2 T chopped onion
1/2 T minced garlic
1/4 C ripe tomatoes, chopped
1/4 bunch parsley, minced (5 T)
4 cooked artichoke hearts, halved
1 1/2 C Lima beans
1/4 C stock
1 bay leaves
pinch saffron threads
1/2 tsp cumin
salt
pepper

Place oil in skillet, over medium heat. Add onion and garlic and saute until transparent.5 minutes.
Add tomato and cook and stir occasionally until sauce is thickened slightly. 3 minutes.
Add artichokes, Lima beans, stock, bay leaf, saffron and cumin. Add 3 tablespoons parsley and stir. Add 5 tablespoons water, cover and cook on medium until almost tender, 10 minutes.
Break eggs into skillet, on top of vegetables, careful not to break. Cover and cook about 5 minutes on medium low.
Garnish with 2 T parsley.
