Use a 12 egg white recipe.
Using your favorite recipe, prepare cake and cool. Cut off top one third of the cake and reserve. Tunnel out the cake leaving a 1 inch wall and bottom.
Fill with pie filling, pudding or custard, mixed with whipped cream. Add berries or fruit if desired. Replace top and frost, or using cake from tunneled area, tear it into small pieces and combine with the filling and whipped cream and use it to fill the tunnel.

3. using the intact cake, slice it in 3 layers and add fruit or berries on top of each layer.
Garnish with mint leaves or chocolate curls if desired. Or use a lime juice sauce, kiwis, and berries.
