    Upside Down Cake, Apricot

    List of Ingredients

    1/2 C butter
    1 C brown sugar
    Apricots
    3 eggs
    1 C sugar
    1/3 C apricot juice or necter
    1 C blended all purpose flour and cake flour (1/2)
    1 tsp baking powder


    Recipe

    Melt butter and brown sugar in skillet over low heat and place a single layer of apricot halves to fill bottom of skillet. Beat eggs until light and add sugar gradually. Sift flour and baking powder. Add juice, then flour to egg mixture. Pour over apricots in skillet. Bake 40 minutes at 350-375 degrees.
