- 1 1/2 C pureed beets
- 2 1-ounce squares, unsweetened chocolate, melted
- 3/4 C vegetable oil
- 1 C sugar
- 2 eggs
- 1 1/4 C flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
Instructions
- Drain and reserve liquid from 1 16-ounce can of beets. slice, dice and puree. Pour into a 2 cup measure. Add reserved liquid to measure 1 1/2 cups.
- Cream eggs and sugar until light and fluffy. add oil and beat 4-5 minutes. Blend in beets and melted chocolate.
- Sift dry ingredients together and add to beet mixture. Add vanilla.
- Grease and flour 2, 8 inch round cake pans. Bake at 350 degrees F. for 30-35 minutes.
