    List of Ingredients


    • 1 1/2 C pureed beets
    • 2 1-ounce squares, unsweetened chocolate, melted
    • 3/4 C vegetable oil
    • 1 C sugar
    • 2 eggs
    • 1 1/4 C flour
    • 1 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp vanilla


    Instructions


    1. Drain and reserve liquid from 1 16-ounce can of beets. slice, dice and puree. Pour into a 2 cup measure. Add reserved liquid to measure 1 1/2 cups.

    2. Cream eggs and sugar until light and fluffy. add oil and beat 4-5 minutes. Blend in beets and melted chocolate.

    3. Sift dry ingredients together and add to beet mixture. Add vanilla.

    4. Grease and flour 2, 8 inch round cake pans. Bake at 350 degrees F. for 30-35 minutes.
