Butter Cake
List of Ingredients
2 C sifted Swans Down cake flour
2 tsp Calumet baking powder
1/4 tsp salt
4 T butter
1 C sugar
1 egg
3/4 C milk
1 tsp vanilla
Recipe
Sift flour once, measure, add baking powder and salt, and sift together three times.
Cram butter thoroughly, add sugar gradually, creming together until blended and light. Add egg and beat thoroughly. Add flour, alternately with milk, a small amount at a time. Beat after each addition until smooth. Add vanilla.
Bake in a greased pan, 8x8x2 inches, in moderate oven (350 degrees F.) 50 minutes. Or bake in two greased 8 inch layer pans, or greased cup-cake pans (375 degrees F.) 25 minutes.
Clever Judy Frosting
1 C sifted confectioners sugar
1 egg or 2 yolks
1/4 C milk
1/2 tsp vanilla
2-4 squares Bakers unsweetened chocolate, melted
1 T softened butter
Combine ingredients in order given, Beating with a rotary beater until blended. Place bowl in a pan of cracked ice and continue beating until of right consistency to spread, (about 3 minutes). Make enough to cover tops of two 9 inch layer pans, or top and sides of 8x8x2 inch cake, or about 2 dozen cupcakes.
