Cup cakes: Walnut Cream Cakes

1 recipe toasted walnut filling (follows)
1/2 C cream whipped
12 large cup cakes
Recipe
Combine toasted walnut filling and cream. Cut a thin slice from top of each cup cake, hollow out centers and fill with cream mixture. Replace tops . Frost if desired.
Toasted Walnut Filling
1/4 C brown sugar, firmly packed
3 T butter
1 teaspoon water
1 egg yolk, slightly beaten
1/3 C walnut meats, slightly broken and toasted
Combine sugar, butter, water and egg yolk in top of double boiler. Place over rapidly boiling water and cook until slightly thickened, stirring constantly. Add nuts. Cool. Use plain or with cream to fill cakes.
