Sponge Cake.
List of Ingredients
3/4 C sifted Swans Down Cake flour
3/4 C egg whites (6-8)
1/4 tsp salt
3/4 tsp cream of tartar
1 C sifted sugar
1/4 tsp vanilla
1/4 tsp orange extract
3 egg yolks, beaten until thick and lemon colored
Recipe
Sift flour once, measure and sift 4 times.
Beat egg whites and salt with a flat wire whisk. When foamy add cream of tartar, continue beating until stiff enough to hold peaks, but not dry. Fold in sugar carefully, two tablespoons at a time. Sift flour over mixture in small amounts, folding carefully.
Divide batter into two parts. To one fold in vanilla. To other fold in orange extract and egg yolks beaten with one and one half additional tablespoons of sugar.
Put by tablespoons into ungreased angel food cake pan, alternating mixtures. (fill pan only half full.)
Bake in slow oven (275 degrees F.) After one half hour increase heat slightly to 325 dgerees F., Bake an additional three fourths of an hour longer.
Invert until cold.
