    Cake, Grandmothers Coconut

    Recipe Introduction

    Preheat oven to 350 degrees F.

    List of Ingredients

    3/4 C shortening
    2 C sugar
    1 1/2 tsp vanilla
    1/2 tsp almond extract
    3 C sifted cake flour
    3 tsp baking powder
    pinch salt
    1 C milk
    6 egg whites

    Recipe

    Beat shortening and gradually add sugar, beat until creamy. Add vanilla and almond extracts.
    Sift together the dry ingredients and add alternately with the milk, ending with the flour. Add egg whites one at a time, beat well. Pour into 3 wax paper lined and greased 9 inch cake pans. Bake 25 minutes. Cool and frost with coconut icing or 7 minute frosting.

    Filling;
    1 1/4 C heavy cream
    3/4 C sugar
    2 T coconut cream
    1 T cornstarch
    1 T milk
    1/2 C butter, room temperature
    1 C shredded coconut
    Bring cream, sugar and coconut cream to a simmer over medium heat. Combine cornstarch and milk with whisk. cook 3 minutes more, add butter and coconut and cook 3 minutes more. Cool to room temperature when thickened.
