    Swans Down Cake Flour-1928

    Recipe Introduction

    Syrup method.

    List of Ingredients

    7/8 C sifted Swans Down Cake Flour
    1/2 tsp cream of tartar
    1/4 tsp salt
    1 1/4 C sifted flour
    1/3 C water
    5 egg whites, stiffly beaten
    5 egg yolks, beaten until thick and lemon colored
    1 tsp flavoring

    Recipe

    Sift flour once, measure, add cream of tartar and salt, and sift together 4 times.
    Boil sugar and water together until a small amount of syrup forms a soft ball in cold water, or spins a long thread. (238 degrees F.). Pour the syrup in a fine stream over egg whites, beating constantly. Continue beating as mixture cools. Fold in egg yolks and flavoring, then flour a small amount at a time. Pour into ungreased tube pan. Bake in a slow oven (350 degrees F.) for 40 minutes. then decrease heat to 325 and bake 30 minutes longer. Remove from heat and invert pan 1 hour, or until cooled.
