List of Ingredients
- 3/4 C all-purpose flour
- 3/4 C granulated sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp vanilla
- 3 eggs
- 2 C dried apricots
- 2 C pitted dates
- 1 1/2 C Brazil nuts
- 1 C red and green candied pineapple
- 1 C red and green marashino cherries, drained
Instructions
- Preheat oven to 300 degrees F. Line a 9x5-inch or 8 1/2 x 2 1/2-inch loaf pan with parchment or foil and grease.
- Combine dry ingredients and add vanilla and egg in large bowl until smooth.
- Stir in fruit and nuts. Spread in prepared pan. Bake 1 hour and 45 minutes.
- Remove from pan, cool on wire rack. Wrap in plastic. Store for up to 2 months in fridge, or freeze.
