    List of Ingredients


    • 3/4 C all-purpose flour
    • 3/4 C granulated sugar
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1 1/2 tsp vanilla
    • 3 eggs
    • 2 C dried apricots
    • 2 C pitted dates
    • 1 1/2 C Brazil nuts
    • 1 C red and green candied pineapple
    • 1 C red and green marashino cherries, drained


    Instructions


    1. Preheat oven to 300 degrees F. Line a 9x5-inch or 8 1/2 x 2 1/2-inch loaf pan with parchment or foil and grease.

    2. Combine dry ingredients and add vanilla and egg in large bowl until smooth.

    3. Stir in fruit and nuts. Spread in prepared pan. Bake 1 hour and 45 minutes.

    4. Remove from pan, cool on wire rack. Wrap in plastic. Store for up to 2 months in fridge, or freeze.
