    Recipe Introduction

    Preheat oven to 350 degrees F.

    List of Ingredients

    2 2/3 C all purpose flour
    1 1/2 tsp baking soda
    1/2 tsp salt
    1/4 tsp baking soda
    1 2/3 C sugar
    3 eggs
    2 1/4 C butter, divided
    3/4 C milk
    6 T grated lemon zest from 6 lemons
    5 T lemon juice, divided
    1 8 oz package cream cheese
    6 1/2 C powdered sugar
    lemon curd

    Recipe

    Butter and flour 2 round cake pans.

    Combine dry ingredients.

    Beat 3/4 cup butter until fluffy, gradually beat in sugar. Beat in eggs, one at a time alternately with flour and milk, starting and ending with flour mixture, until combined. Beat in 3 tablespoons zest and 1 tablespoon juice.

    Divide batter between pans. Bake 25 minutes. Cool in pans 20 minutes. Finish cooling on a rack.

    Cream the 1 1/2 cups butter and cream cheese until fluffy. Beat in powdered sugar, 3 tablespoons lemon zest and 2 tablespoon lemon juice, until combined.

    Spread lemon curd on top of first layer. Add top layer and frost with icing. Garnish with rosettes and candied lemon slices.

    Var: Use marmalade in place of English curd.
