Preheat oven to 400 degrees F.
List of Ingredients
5 egg whites
1 tsp vanilla
1/2 tsp cream of tartar
1 1/2 C sugar
Recipe
Beat egg whites until frothy. Add cream of tartar and vanilla. Add sugar gradually and beat until stiff. Pour into an 8x8 baking pan. Place in the oven and turn off the heat. Leave overnight.
Filling;
5 egg yolks
Juice and rind of 1 1/2 lemons
1/2 C sugar
Beat the yolks with juice and rind of lemons. add the sugar. Cook in double boiler until thick. Let cool.
Spread a layer of whipped cream on the cake. Then half of the cooled filling.
Spread on the cake more whipped cream and filling (layer two).
Frost top of cake with more whipped cream. Add chopped nuts or coconut if desired.
