    Swans Down Cake Flour-1928

    Recipe Introduction

    Uses 5 eggs.

    List of Ingredients

    1 C sifted Swans Down Cake Flour
    1/4 tsp salt
    5 egg yolks
    1/2 lemon, grated rind and juice
    5 egg whites
    1 C sifted sugar

    Recipe

    Sift flour once, measure, add salt, and sift 4 more times.
    Beat egg yolks until thick and lemon colored, add lemon juice and rind, and beat very light. Beat egg whites to peaks but not dry. Fold in sugar a small amount at a time, then add egg yolks, and finally, flour mixture. Bake in ungreased tube pan in slow oven, 325 degrees F. at least 1 hour. . remove from oven and invert pan for 1 hour or until cool.
