Brazil Nut Sensation

Recipe Introduction
Temperature 300 dgrees F.
Time 1 hour and 45 minutes.
List of Ingredients
- 3/4 C sifted all-purpose flour
- 3/4 C granulated sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3 C shelled Brazil nuts (1 pound shelled or 2 pounds unshelled)
- 2 packages pitted dates (about 1 pound)
- 1 C well drained maraschino cherries
- 3 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven. Grease, then line with waxed paper a 9x5x3 inch loaf pan.
- Sift together first 4 ingredients.
- In a large bowl, place nuts, dates and cherries. Sift flour mixture over. Mix with hands until nuts and fruit are well coated.
- Beat eggs until foamy, add vanilla and stir into nut mixture until well coated. Spread in pan evenly. Bake until done. Cool in pan on wire rack 15 minutes. Remove from pan, peel off paper and cool on rack.Wrap in aluminum foil. Store in refrigerator.
