Beat the whites of four small eggs to a high, firm froth, then stir into it half a pound pulverized sugar, flavor with essence lemon, continue to beat until very light; then drop the size of a walnut, and about an inch apart, on parchment paper on a heavy aluminum baking sheet and place in a hot oven, watch, and as soon they begin to look yellowish take them out.Recipe
