    2 cups sugar
    1 cup buttermilk
    3/4 cup butter
    1 teaspoon baking soda
    1 teaspoon vanilla extract
    2 cups chopped pecans





    Recipe



    Combine sugar, buttermilk, butter and baking soda in a 2-quart microwave-safe bowl.
    Microwave, covered with plastic wrap pricked with 2 or 3 holes, for 2 1/2 minutes.
    Stir and turn.
    Microwave for 15 minutes, stirring and turning every 5 minutes.
    Microwave for 2 minutes longer or to 234 to 240 degrees on a candy thermometer, soft-ball stage.

    Add vanilla and heat until soft peaks form. Stir in pecans. Pour into buttered dish.
    Let stand until firm. Cut into squares. Do not substitute
    margarine for butter in this recipe.

    Yield: 48 servings.
