Make the syrup for this candy in a big, heavy skillet. And since you have
to work fast to achieve just the right professional finish, have everything in readiness before you start. You can substitute the canned, salted peanuts if you first rub them lightly between paper toweling to remove some of the salt.
List of Ingredients
2 tablespoons butter or margarine
1/2 cup boiling water
2 tablespoons molasses
1 1/2 cups Beet Sugar
1 cup shelled peanuts
1 teaspoon baking sodaRecipe
In a large heavy skillet melt butter or margarine; add boiling water and molasses. Add sugar and stir to dissolve well; bring mixture to a boil and cook rapidly, without stirring, to a hard-crack stage (310° F.). Quickly add peanuts and soda; stir until soda foams and is well combined. Pour out into a greased shallow baking pan or sheet. Pull and stretch candy into a thin layer, using two forks. When cold, break into irregular pieces. Makes 1 sheet brittle, about 3/4 pound.
