    2 cups sugar
    3 (1/4 ounce) envelopes unflavored gelatin
    1 1/2 cups water
    3/4 C of your favorite juice
    1/4 teaspoon salt
    3 T citrus zest, if desired (or other dried flavorings)
    Coloring, if desired
    Cornstarch



    Recipe



    Add the water, sugar, and gelatin to a saucepan. Stir the mixture over medium high heat until it begins to boil.
    Boil until the mix creates a short thread, about 20 minutes. Remove the mixture from the heat.
    Stir in the orange and lemon juice and the salt. Let the mixture cool. Stir in the zest or flavorings.
    Run cold water over a soup plate to prevent sticking. Pour the candy into the pan. Allow the mixture to set until cool enough to handle.Scrape the candy out with a melon baller or knife. Form the candy into pebble shapes, or other desired shapes and dust the pieces in cornstarch. Lay out on a wire rack to dry for several hours.

    Finish with coatings:
    Either make several batches and color them in stone colors or divide the coating to suit. Think about the color used with the filling. You may also do a first coat of chocolate if desired, (or white chocolate)

    Hard candy shells
    # Bowl large enough to hold the saucepan
    # Ice
    # Cold water
    # Flat baking sheet
    # Nonstick cooking spray
    # 1/2 cup light corn syrup
    # 2 cups granulated sugar
    # 1 cup water
    # Medium-sized saucepan
    # Wooden spoon
    # Candy thermometer
    # Metal skewers
    Fill the bowl with ice and cold water, leaving a few inches at the top so the saucepan will fit without causing the water to spill over the sides of the bowl
    Grease the flat baking sheet with nonstick cooking spray.
    Combine the corn syrup, sugar and water in the saucepan.
    Set the heat to medium-high.
    Stir until the sugar is completely dissolved.
    Leave the pot on medium-high heat, testing the temperature after 10 minutes. The temperature needs to be 300 degrees Fahrenheit. (It may take longer than 10 minutes.)
    Once the temperature reaches 300 degrees, remove the pan from the heat, turn off the stovetop and immerse the saucepan in the bowl of cold water. Be sure that no cold splashes into the pan.The candy will take a moment to stop boiling, so put the items to be dipped on the skewers in the meantime.
    Being careful to touch only the top of the skewer, dip the items into the candy. Let any excess coating drip off into the saucepan.
    Place the dipped items on the baking sheet and let them sit at room temperature for at least one hour.
    2-3 coatings would be good, but time consuming, 1 will suffice in that case.
