    Branston Pickle

    List of Ingredients

    1 medium carrot, cut into 1/8 inch cubed

    1 cup rutabaga, cut into 1/8 inch cubes

    2 cloves garlic, minced

    6 dates, pitted and cut into 1/8 inch cubes

    3 cauliflower florets, finely chopped

    1 medium yellow onion, finely chopped

    1 medium apple, finely chopped

    1 medium zucchini, finely chopped

    5 sweet gherkins, finely chopped

    1/2 lb dark brown sugar

    1 tsp salt

    juice of a lemon

    1/2 cup apple cider vinegar

    caramel colouring or "Kitchen Bouquet"





    Recipe

    Heat to boiling in a saucepan;
    reduce heat to a simmer and cook until rutabaga is cooked but still slightly crunchy.
    Add enough caramel colouring until colour is dark brown.
    Bottle and seal.

    * 9 oz Carrots, peeled and small dice (or grate)
    * 3 small white turnips, peeled
    * 10 big Cloves of Garlic, peeled and crushed
    * 1 cup dried apricots, chopped
    * 1 cup prunes, chopped
    * 1 cup raisins
    * 1 medium Cauliflower, finely chopped or cubed small
    * 2 large Onions, peeled and cut up
    * 2 Apples, peeled, cored and small dice
    * 2 zuccini, unpeeled and diced
    * 15 small cocktail Gherkins, chopped
    * 8 oz Brown sugar
    * 1 salt
    * 2 1/2 Lemon juice
    * 2 1/2 C Cider vinegar
    * 1 C Malt vinegar
    * 1 tablespoon Worcestershire sauce
    * 2 teaspoons black Mustard seeds
    * 1 scant tablespoon of mustard powder
    * 1 heaped teaspoon Ground allspice
    * A big grind of black pepper
    * 1 to 2 tablespoons of "Kitchen Bouquet"
    * 1 tablespoon of arrowroot powder
