    Rainier Cherries
    Brine:
    2 quarts water
    1 Tablespoon pickling salt
    4-1/2 pounds pitted Rainier cherries with stems

    Syrup:
    4-1/2 pounds granulated sugar
    3 cups water
    Juice of one lemon
    1 ounce almond extract

    Recipe



    Bring water and salt to a boil, stirring to dissolve salt. Let cool for 10 minutes, then pour over pitted sweet cherries. Cover and let sit overnight.

    Drain cherries, discarding brine, and rinse. Set aside.

    In a large saucepan, combine sugar, water, and lemon juice. Bring just to a boil, stirring until sugar is dissolved. Remove from heat. Pour this syrup over the cherries. Cover. Let stand for 24 hours.

    Drain cherries, reserving juice. Set cherries aside. Bring reserved juice to a boil again. Remove from heat and stir in almond extract. Pour juice over cherries.

    Pack cherries with juice in hot sterilized pint jars. Place in canning kettle with water to just cover jars by 1-2 inches. Process 20 minutes at sea level.
