12 half pint jars
List of Ingredients
3 pounds baby okra
12 small cloves garlic
12 small red chili peppers
3 C water
6 T salt
1 1/2 tsp dill weedRecipe
Wash okra. Pierce each in several places with a wooden toothpick. Pack into sterilized jars, 1 pod up and next pod down, leaving a half inch head space. Tuck 1 garlic and 1 pepper in each jar.
Combine water, vinegar and salt. bring to a boil, over moderate heat. Immediately pour into jars leaving one quarter head space. Add about one eighth tsp dill to each jar. Release bubbles. Cover with lids, and screw bands down firmly.
Process 5 minutes. Cool. Store in a dark place for 1 month.
