List of Ingredients
2-3 pounds of green beans
1/4 of a thai pepper, slivered
4 scallions
2-4 heads of dill
2 cloves garlic
salt
1 C olive oil
1 qrt vinegar
1/4 tsp mustard seed
1 tsp whole allspice
1 tsp black peppercorns
Recipe
Wash beans. Trim ends and string if tough. In a bowl, layer beans with salt. Let stand 5 hours. Rinse. Drain. Place 1- 2 dill heads, garlic and a sliver of pepper in a sterilized quart jar. Pack beans tightly with 2 scallions in each jar. Make a brine with remaining ingredients and pour over beans. Process in boiling water bath 10-15 minutes.
