    Makes 1 quart jar.

    List of Ingredients




    your choice of fish

    Pickling Brine;
    1 pint vinegar
    8 whole cloves
    8 bay leaves
    6 pieces orange peel (1/4 inch by 1 1/2 inch)
    1/2 tsp celery seed
    1/4 tsp dry mustard
    1/2 tsp coriander seed
    1/4 tsp black pepper
    1/8 tsp paprika
    1/2 tsp sugar
    1/3 clove garlic
    1/4 tsp cinnamon
    6 cardamom seeds
    1/2 tsp dill
    1/2 tsp allspice

    To prepare fish;
    Clean and wash. Fillet fish. Cut fish in 1-2 inch pieces. Pack into crock and use 5/8 cup salt and enough vinegar to make a quart (and cover the fish with). Leave in the solution 4-8 days. Remove the fish and place in cold water for 8 hours. Rinse and pack into the quart jar.
    Simmer the brine for 45 minutes, bring to a slow boil. Remove from heat. Add 1 1/4 tsp unflavored gelatine. Stir to dissolve. Have the fish loosely packed in jars. Add slices of onion,or anything else you like in your pickled fish. Put the hot pickling brine over. Chill for 4 days.

    Var;
    Wine. use 1/2 vinegar and half sauterne. Add wine to jar last.
