Pickles , Pumpkin

List of Ingredients
- 1 1/4 pound pumpkin, Cut in 1 inch cubes
- salt
- 1 quart vinegar
- 1/4 C lemon juice
- 1 C brown sugar syrup
- 1 3/4 C water
- 3 cinnamon sticks
- 1 knob ginger (1/2 inch)
- 3/4 tsp ground cloves
- 3/4 tsp ground allspice
- 3/4 tsp ground nutmeg
Instructions
- Peel pumpkin and cut in cubes. Place in a bowl and liberally sprinkle with salt. Let set 2-3 hours. Rinse and drain.
- Make a syrup of the remaining ingredients. Cook pumpkin in this syrup for 5 minutes.
- Remove cinnamon sticks and place one in each of 3 quart jars. Ladle pumpkin and syrup into jars and seal for 10 minutes.
