    Pickles 3, Pumpkin

    List of Ingredients


    • 1 1/4 pound pumpkin
    • 1 C sugar
    • 2 C vinegar
    • 2 C water
    • 3 cloves
    • 6 peppercorns
    • 3 small bay leaves
    • 3 cloves of garlic
    • 1 1/2 inch piece ginger, cut in thirds


    Instructions


    1. Pare pumpkin and cut into 1 inch cubes. Make a brine of vinegar, water and garlic. Cook the pumpkin in it for 5 minutes. Place 1 clove, piece of ginger, 2 peppercorns, 1 bay leaf and 1 clove of garlic in each of 3 quart jars. Process 10 minutes.
