    Marmalade, Rhubarb

    Recipe Introduction

    makes 4 pints.

    List of Ingredients

    4 pounds rhubarb
    5 pounds sugar
    1 pound raisins
    rind of 1 lemon, cut in shreds
    juice of 2 oranges
    1/2 tsp cloves
    1 tsp cinnamon

    Recipe

    Wash rhubarb and cut in 1 inch pieces. Cover with sugar and let stand overnight. Add remaining ingredients. Heat to the boil. Reduce heat and simmer about 40 minutes or until thick. Stir frequently to prevent scorch. Pour into sterilized jars, cool and seal.
