Zucchini Relish

Grind 10 cups zucchini. 5 cups of onions; sprinkle with 5 tablespoons salt on top and let stand overnight in ice box; Drain and rinse. Add: 2 1/2 cups vinegar; 5 C sugar, 1 tablespoon dry mustard; 1 tablespoon turmeric. Grind 1 green, red, yellow pepper (for those who like it hot you can add hot peppers) add to the other ingredients. Cook for 30 minutes and put in jars and seal. Yum Yum I have made 4 batches so far this summer.
Recipe
I put mine in pints - one batch makes six pints. Once it cooks it is ready to eat. We eat it on sandwiches, put in potato salads, egg salad, macaroni salad on hot dogs (if you eat them and hamburgers. I made two batches last year and they fought over it - so this year I made 4 batches and added hot peppers to two batches for my brother.
no need to process - just have jars hot and lids - fill jars with hot relish and seal
