Chicken casserole

Recipe Introduction
This uses some leftovers. Use any vegetables of your choice.
List of Ingredients
one cup rice
two cups water
one chicken and chipotle bouillon cube
one half of a carrot sliced paper thin
one quarter of an onion, diced
five mushrooms, sliced
0ne half cup sliced sugar snap peas, in half inch lengths
one half cup diced bell pepper
one celery stalk, cubed
one and one half cups of cooked chicken, cubed or in small pieces
one half cup grated monterey jack cheese

If you are not using leftover rice (two cups) then cook the rice, water and bouillon for twenty five to fifty minutes, depending on the type of rice used.
Layer in a two quart casserole dish.
first layer, one third of the rice. Layer two,one third of the chicken and vegetables combined, another layer of rice. and again a layer of chicken-vegetable. Top with the cheese. cover and bake twenty five minutes at three hundred and fifty degrees.
