Lentils and Sausages

List of Ingredients
- 1 C lentils
- 1 onion, chopped
- 1 clove garlic, pressed
- 1 stalk celery with leaves. chopped
- salt (up to 2 tsp)
- 2-3 sprigs parsley
- peper
- sausages
- olive oil
- 1 T flour
- 2 tomatoes, sliced
- Sherry or red wine
Instructions
- Soak lentils overnight. Drain and reserve liquid. Heat 2 cups oft his liquid and add onion, garlic, celery, parsley, salt and pepper. Add lentils and simmer, covered for 15-20 minutes.
- Brown the sausages in the broiler.
- Grease a casserole dish with olive oil. Make a broth of some olive oil or sausage grease, the flour and 1 cup of the lentil juice.
- Place the lentils in the casserole dish and pour the broth over. Place sausages on top and sliced tomatoes over. Cook, uncovered at 250 degrees for at least 2 hours. From time to time add a few dashes wine or Sherry.
