    4 pound brisket
    4 pounds of fowl
    1/2 pound fat pork
    pepper
    6 small turnips, quartered
    6 small whole onions
    6 medium potatoes, halve or quarter
    1 1/2 pounds pea beans (or Navy)
    2 1/2 quarts cooked, hulled corn

    Recipe



    Soak beans overnight. Cook until tender. mash the beans and reserve. Soak the brisket one hour. Drain. Place in a large kettle with the fowl and fat pork. Cover with cold water and season with pepper to taste. Bring slowly to a boil, simmer very gently 4 hours. Add hot water to keep meat covered. When tender add the vegetables and cook gently 35 minutes. Remove meat and vegetables. Stir in mashed beans and corn. Serve each each portion with a piece of brisket and fowl in a soup plate with vegetables and bean puree.
    This is usually better reheated.
    Makes several quarts.
