Combine ingredients to a stiff dough. Roll out very thin on a board dusted with cornstarch. Leave to dry slightly. Roll dough jelly-roll fashion. and cut through diagonally into fine strips. (At this point you can coat them well with cornstarch or flour and freeze for later use). Cook in boiling water about 3 minutes. Drain and rinse in cold water and drain well. reheat before serving by placing in a wire strainer and dipping in boiling water a few seconds, shake dry and use.
For fried noodles, omit the boiling process and fry in deep oil until light brown.
You can also dry the fresh noodles and use them later. Boil 5 minutes.
