    List of Ingredients




    1 pound pork sausage or ground pork
    1 C water chestnuts, chopped
    3/4 C minced celery
    1/2 C minced onion
    1/4 C chopped almonds
    1 clove garlic, crushed in salt. omit salt if using sausage
    1/2 C day old bread crumbs
    1 T soy sauce
    2 eggs
    Cornstarch for meatballs

    1 C chicken stock
    1/2 C sugar
    1/2 C vinegar
    3 T corn starch
    2 tsp soy sauce
    1/2 C pineapple juice
    1 bell pepper, cut in strips
    3 slices pineapple, cut in chunks

    Mix above ingredients and shape into small balls and roll in cornstarch to coat. Fry slowly in bland cooking oil.
    Meanwhile make sweet and sour sauce;
    Pour off all but 2 T of the oil. Add the chicken stock, sugar, vinegar, cornstarch, soy sauce, and pineapple juice. Cook 3 minutes. Add green pepper and pineapple chunks. Cook just to heat through. Pour sauce over meatballs and serve over hot rice.
