Quon Gin Ming Ha (prawns)

1 tsp salt
1 T flour
1 tsp soy sauce
1 T soup stock
4 eggs, slightly beaten
1 tsp rice wine
1 medium head lettuce, shredded
1 pound prawns, cut in thirds
2 T sesame or peanut oil
1/2 tsp malt vinegar
2 T ketchup
2 tsp ginger, minced
2 tsp scallion, minced
Recipe
cut the cleaned prawns into 3 pieces each. Marinade in salt, wine, soy sauce, ginger and onion. Sprinkle flour on top and add eggs.
Heat the oil and add prawns with marinade. Cook over low fire and add 1/2 tsp malt vinegar. Add ketchup for color. Bring to a boil and serve with lettuce as garnish.
