    See Jup Hai-(crab in black bean sauce)

    List of Ingredients

    1 medium crab
    Sauce;
    1 tsp salt
    1 1/2 T rice wine or sherry
    1 tsp cornstarch
    2 T peanut oil
    6 T soy sauce
    5 cloves garlic, pressed
    2 slices fresh ginger, minced
    1 T black beans, salted, paste
    2 T water
    Scallions for garnish
    Chinese parsley for garnish

    Recipe

    Clean the crab and cut, shell and all into serving size pieces. Heat the oil and cook crabs until they turn color. remove from fire.
    Heat frying pan with oil. Add garlic, black bean paste, ginger, wine, soy sauce and salt. heat thoroughly, stirring. Add crab and cook 3 minutes. Add cornstarch, mixed with the water. Cook to a boil. Serve hot garnished with scallion and Chinese parsley.
