    1 tsp salt
    1 tsp sugar
    5 cloves garlic, pressed
    2 T water
    1 tsp cornstarch
    6 T soy sauce
    2 T Saki wine
    4 T peanut oil
    4 T black bean paste
    a 1 inch piece ginger, crushed
    2 medium lobsters with shell

    Recipe

    Crush the garlic with the ginger. Add soy sauce, sugar wine and water. Cut the lobster into 1 1/2-2 inch pieces. Marinate in the sauce for 1 hour. Drain, Reserving the sauce, and fry in the oil over medium high heat until the lobster turns red. Pour the reserved sauce over, bring to a boil and add cornstarch mixed with water to thicken gravy.
