    List of Ingredients


    • 1 large onion, thinly sliced
    • 2 C diced meat, fowl or seafood
    • 2 C chooped chinese cabbage
    • 2 c chopped spinach
    • 1 1/2 C sliced bamboo shoots
    • 1 C bean sprouts
    • 2 C sliced mushrooms
    • 6 oz snow peas
    • 2 T cornstarch
    • 2 T soy sauce
    • 2 tsp sugar
    • 1 C chicken broth
    • 1/2 pound fine chinese noodles
    • boiling salted water
    • 1/3 C peanut oil


    Instructions


    1. Saute meat, fowl or seafood for 1 minute. Push aside in pan. Saute onion until tender, add cabbage spinach, bamboo, bean sprouts, mushrooms and peas for 4 minutes or until just tender.

    2. Combine cornstarch, soy sauce, sugar and broth. Heat to thicken.

    3. Cook noodles and drain. Fry noodles in 2 tablespoons of peanut oiil until crisp.

    4. Serve chao mien over the noodles.
