Tin Soon Yu-(sweet and sour fish)

3 T water
3 T cornstarch
1 fish, 2 1/2 to 3 pounds, Scaled
1/2 tsp salt
pepper
Sauce:
1 C sugar
1 1/3 C water
3 T oil
2/3 C malt vinegar
4 T cornstarch
salt to taste
4 T soy sauce
1 C coarsely chopped onion
Recipe
Clean fish. Make 3 slashes from top almost to tail on the fish. Combine the cornstarch, salt and water. Coat the fish. Heat oil for deep fat frying and hold the fish up over the pan, baste the slashes with hot oil until brown. Carefully drop the fish into the fat and fry until crisp, about 15 minutes
Sauce:
mix all the sauce ingredients together and bring to a boil over medium heat, stirring. Pour over fish and serve.
