Beet Pickled Eggs

5 medium beets
8 hard boiled eggs
1 1/2 c cider vinegar
5 T sugar
2 garlic cloves, crushed
1 1/2 tsp pickling spice
3/4 tsp saltRecipe
Cook the beets until a fork inserted goes all the way to the center and the beets are tender throughout.
Peel the eggs. Mix all but the eggs and allow to stand for 45 minutes.
Place eggs in a large jar and add the rest of the ingredients with the marinade from the beets. Chill for 1 day to a week.
