Coconut Curd

List of Ingredients
5 egg yolks
3/4 cup sugar
125g/4 oz butter, cut into cubes
1 1/4 cup coconut milk or coconut cream
Recipe
Step 1 - Whisk the yolks and the sugar in a saucepan on low to medium heat. Heat gently and then add the butter cubes and stir until melted.
Step 2 - Add the coconut milk and keep stirring until it is smooth and thickened. It will thicken much more on cooling. Place in sterilized jars and seal with lid.
Note;
when I made this I added roughly 1/4 C of dessicated coconut to it, (the non-sweetened, dried coconut found in bulk foods).
If you can't find that, use regular shredded coconut and chop it up to about the length of rice grains.
