    Pickled Beets, Werth and O'Briens

    List of Ingredients


    • 1 1/2 to 2 cups cooked, peeled and sliced beets (5-6 medium)
    • 1/2 C distilled white vinegar
    • 1/4 C water
    • 1/4 C firmly packed brown sugar
    • 2 T granulated sugar
    • 1 T pickling spices, tied in cheesecloth


    Instructions


    1. Place beets in a glass bowl and set aside. Put vinegar, water, both sugars and spice bag in saucepan. Mix well and bring to a boil over high heat. Lower heat to medium and simmer for about 10 minutes, stirring occasionally, until thin syrup forms. Pour over beets, toss loghtly and let cool completely. Cover or transfer to a quart jar and refrigerate. Remove spice bag before serving.



    Final Comments


    Beets can be boiled, steamed, or baked at 400 degrees F. Test for doneness by poking with a knife, it should slip in easily.
