- 5 egg whites
- 1 1/2 pounds confectioners sugar
- 5 T matzoh cake meal
- grated rind of 1 lemon
- 1 pound blanched almonds, finely ground
Instructions
- Beat egg whites until stiff but not dry. Add sugar, a lttle at a time, until blended. Fold in cake meal, lemon rind and almonds, being careful not to break down egg whites. Drop by teaspoonful on a foil lined cookie sheet, leaving 1 inch between. Bake 300 degrees F. for 15-18 minutes or until lightly browned on top and bottom. Cool and peel off foil.
