Hand formed, Chinese Almond Cakes

- 1/4 pound sweet cream butter
- 1 C flour
- 4 T sugar
- 1/2 tsp baking powder
- 2 T finely chopped almonds
- 1/2 tsp almond extract
- Split, blanched almonds
Instructions
- Combine flour and baking powder. Cream butter and sugar. add flour mixture, chopped almonds and extract and mix thoroughly. Roll in small balls and set on lightly floured cookie sheets. Flatten balls in 1/4 inch thickness and push a split almond into centers. bake at 350 degrees F. for 20 minutes.
